Simmered Red Sea Bream
- Ingredients (Serves 4)
- *500g / 18oz red sea bream fillet
*1/2 cup / 100ml sake
*1/2 cup /100ml mirin (a sweet cooking sake)
*5 tbsp soy sauce
*1/4 cup / 50ml water
*3 tbsp sugar
*1 knob of ginger / 30g / 1oz - peeled and thinly sliced
1 Cut the fillet into 4 pieces.
2 Heat the sake, water, mirin and soy sauce in a pan. When the broth gets warm, add the sugar and dissolve it. When the broth comes to a boil, add the fillets. Put the fillets skin-side down in the pan to prevent the skin from shrinking.
3 Add the sliced ginger to the pan. Put the drop lid on and simmer for a few minutes.
4 When the skin side of the fillet is well cooked, turn it over. Continue cooking the fillets until half of the liquid is gone.
5 Turn off the heat and let it stand for a while, so the fish can absorb the extra liquid.
