Deep-fried Vegetables in "Mentsuyu"(noodle broth)
- Ingredients (Serves 4)
- * 2 eggplants
* 1/8 squash
* 4 green asparagus shoots
* 1 red pepper
* 1 yellow pepper
* 2 1/2 cups / 500ml "Mentsuyu"
1 Remove the stem of the eggplant and cut it in half. Then cut it into 6 pieces. Soak the eggplant in water for about 5 minutes and pat it dry.
2 Remove the seeds of the squash and cut it into 8 half moon-shaped pieces.
3 Trim the asparagus and remove the little leaves. Cut it into 4 pieces.
4 Cut each pepper in half lengthwise. Remove the seeds and cut it into thin, bite-size pieces.
5 Fry the vegetables in the hot oil until they are golden brown. Drain them.
6 Soak the fried vegetables in "Mentsuyu" while they are still hot.
* You can use any kind of vegetable you like except leafy or juicy ones.
* You can eat this dish right away or keep it in the refrigerator for 2-3 days.
