Cold Soba Noodle with Grated Daikon Radish
- Ingredients (Serves 4)
- * 250g / 9 oz - 300g / 11 oz dried soba noodle
* 10cm daikon (Japanese radish)
* 2 cups / 400ml "Mentsuyu"
1 Peel the daikon and cut it in half. Grate it.
2 Bring the water to a boil and add the soba. Stir the noodles once in a while to prevent them from sticking.
3 When the water comes to a boil again, add 1cup of water.
4 Taste the soba and make sure they are cooked throughout. Turn off the heat.
5 Wash the noodles with cold water. Drain them well.
6 Put the noodles in dishes and add as much grated daikon as you like. Pour the mentsuyu around the edges of the dishes.
* You can also add nori seaweed, wasabi, Japanese leek (cut and soaked in water) if you like.
