Microwaved Sekihan Azuki Beans and Rice

Ingredients (Serves 4)
*2 cups/ 400ml "Mochigome" glutinous rice
*60g/ 2oz azuki beans
*1+1/2 cups (300ml) water to boil azuki
*Roasted black sesame with salt

1 Put the azuki beans in a bowl and soak in ample water for 2-3 hours.

2 Wash the glutinous rice. Soak in water for about 30 minutes, and drain.

3 Put the azuki beans in a pan, and add 300ml fresh water. Place the pan over low heat and simmer beans until they are soft, but not completely cooked. (If the beans can be crushed with fingers, they are overcooked. Make sure some firmness remains.) Drain the azuki beans in a strainer, but keep cooking water in a bowl. Add more water until it measures 300ml. Set aside and cool.

4 Pour the azuki beans, glutinous rice and the mixed water in a glass bowl, or a microwave-safe bowl. Cover the bowl loosely with a plastic wrap, and microwave on 600W for about 9 minutes.

5 Stir well and cover the bowl with wrap once again. Microwave on 600W for 3 more minutes. Serve on a serving plate and sprinkle roasted black sesame with salt.
