Beef and Potato Croquettes

Ingredients (Serves 4)
*7 potatoes (750g / 26oz)
*1 onion (200g / 7oz)
*300g / 11oz ground beef
*Salt and pepper to taste
*3 tbsp butter
*For breadcrumb coating:
   all-purpose flour
beaten egg
dried breadcrumbs
*Vegetable oil for deep frying
*Shredded cabbage
*Tonkatsu sauce
(Japanese Worcestershire sauce)--- to taste

1 Rinse the potatoes. Cut them in half and wrap them. Microwave on 600W for about 9 minutes. If they are still hard, cook them a little longer or you can leave them to steam after microwaving in the plastic wrap until they are softened. Peel them while they are hot and then mash them smoothly.

2 Cut the onion into 7-8mm square pieces. Heat the butter in the frying pan. Add the beef and sauté it. Add the onions and continue to sauté until the onions are translucent. Season them with salt and pepper.

3 Add the beef mixture and juices to the mashed potatoes. Season with a little salt and pepper again and mix together well.

4 Make easy-to-eat size balls. Coat them with flour, beaten egg and then Japanese bread crumbs and fry them until they are crispy. Serve the croquettes with shredded cabbage.
