Simmered Beef and Burdock
- Ingredients (Serves 4)
- *200g/ 7oz thinly sliced beef
*2 burdock roots
*4 tbsp soy sauce
*2 tbsp sugar
*2 tbsp "Mirin"sweet cooking sake
1 Cut beef into 4-5cm strips. Peel burdock and cut diagonally into 1cm pieces. Soak burdock in water for about 5 minutes to remove the bitterness. Drain well.
2 Turn the heat on medium. Pour a little vegetable oil in a frying pan to fry burdock roots for about 3-5 minutes. Add beef and stir-fry. Make sure the slices are not stuck together.
3 When the beef browns, add soy sauce, sugar and "Mirin" sweet cooking sake. Turn the heat low and simmer till the broth nearly evaporates.
