Sardines with Aromatic Vegetables
- Ingredients (Serves 4)
- *8 "Iwashi" Japanese sardines
*1 cup / 200 ml soy sauce
*1/4 cup / 50 ml mirin
*1/4 cup / 50 ml sake
*2 tbsp sugar
*1 tsp miso soybean paste
*1/2 tbsp vinegar
*1 tsp toban djan (Chinese chili bean paste)
*1 tbsp minced garlic
*1 tbsp minced ginger
*1 stalk of leek, minced
*5 tbsp ground sesame seeds
1 Put the miso soybean paste, soy sauce, mirin, sugar, sake, vinegar, toban djan, the minced ginger, minced garlic, minced leek and ground sesame seeds into a bowl in this order.
2 Remove the innards of the sardines and wash them well. Wipe the sardines dry with paper towel.
3 Put the sauce into a plastic ziplock bag. Add the sardines evenly. In this way, the sardine can absorb the sauce well. Soak them for half a day.
4 Cover a baking tray with foil and parchment and place the sardines on it. Bake them for 20 minutes at between 220~250°C/ 430~480°F.
