Pumpkin and Sweet Potato Salad

Ingredients (Serves 4)
*300g/ 11oz 1/4 pumpkin
*250g/ 9oz 1 medium sized sweet potato
*3 thinly-sliced strips of bacon
*1/4 onion
*1 tsp granulated consommé
*5 tbsp mayonnaise

1 Peel the sweet potato. Cut it into small bite-size pieces. Soak in water for 5-10 minutes and drain them.

2 Cut the pumpkin into bite-size pieces. Shave off the skin. Slice the onion and soak it in water for 5-10 minutes and drain. Cut the bacons into 2cm long pieces.

3 Put some paper towel in a microwave bowl. Add the pumpkins, bacons, drained sweet potatoes in this order.

4 Cover and microwave on 600W for about 7minutes. Remove from the microwave. Take the paper towel out of the microwave bowl. Mash the mix roughly while it is still hot. Add the granulated consommé. Mix and cool down.

5 Add the onion and mayonnaise, and mix. Season with salt and pepper.
