Tofu with An Sauce and Green Onion

Ingredients (Serves 4)
*2 blocks silk (soft) tofu
*1 cup/ 200ml dashi stock
*2+1/2 tbsp soy sauce
*2 tbsp mirin
*1 tbsp sugar
*1 tbsp potato starch stirred in 1 tbsp water
*Green onions to taste
*Japanese mustard

1 Cut the tofu in half and heat over low heat in boiling water.

2 "An" sauce preparation
Heat the mixture of dashi stock, sugar, soy sauce and mirin in another pan. When comes to a boil, add potato starch dissolved in water to thicken the mixture.

3 Place the tofu on a plate, and pour "An" sauce over top. Put the chopped green onions on top. Serve with Japanese mustard to your taste.
