Miso Flavored Ramen Noodles with Bean Sprouts

Ingredients (Serves 4)
Chicken soup
*3 whole chicken legs
*1 green part of Japanese leek
*1 knob ginger
*2 tbsp shokoshu (Chinese sake)
*1 tbsp Chinese-style chicken-based soup paste
*1 tbsp soy sauce
*6-7tbsp "Miso" bean paste
*10 cups (2000ml) boiling water

Meat miso topping
*200g/ 7oz ground pork
*1 tsp grated garlic
*4 tbsp chicken stock (prepared earlier)
*1 tsp sugar
*1 tbsp soy sauce
*4 tbsp "Miso" bean paste
*Minced Japanese leek

Vegetable topping
*200g/ 7oz "Moyashi" bean sprouts
*1 bunch "Nira" Chinese chives
*Salt & pepper

*2 packs (300g/ 11oz) uncooked Chinese noodles

1 Soup preparation
Wash the chicken and pat dry. Put cuts near the bones of the chickens. In a large pan, bring the water to a boil and add the shokoshu, the green part of the leek, the clashed ginger and the chicken. Skim the surface of the soup. Turn the heat on low, put the lid and let simmer for about 10 to 15 minutes. Turn off the heat, let it stand for about 5 minutes. Remove the chicken, leek and ginger. The chicken stock is done. Set aside one cup of the chicken broth to be used in "Meat miso" and "Boiled chicken with spicy sesame sauce". Add the Chinese soup paste and miso in the soup. Dissolve well.

*Allow the chicken to cool at room temperature, and chill in the fridge for "Boiled chicken with spicy sesame sauce".

2 Meat miso topping preparation
Finely mince the white part of the leek. Set aside 3 tablespoons of minced leek for "Boiled chicken with spicy sesame sauce". Heat the vegetable oil in a frying pan. Fry the pork and add the grated garlic and fry together. Add the chicken soup, sugar, soy sauce, miso, minced Japanese leek and mix.

3 Vegetable topping preparation
Remove the ends from the bean sprouts. Cut the Chinese chives into 5 cm long. Heat the vegetable oil in a frying pan. Add the bean sprouts and Chinese chives. Fry them on high. Season with salt and pepper.

4 Put the uncooked Chinese noodles in the hot water while loosening them. Boil them 3-4 minutes.

5 Divide the Chinese noodles into the bowls evenly. Pour the chicken soup over top.

6 For each bowl, place the vegetables toppings and meat miso toppings.
