Boiled Chicken with Banbanji Sauce (Spicy Sesame Sauce)

Ingredients (Serves 4)
*3 boiled whole chicken legs
*2 cucumbers

Banbanji sauce
*4 tbsp sesame paste
*4 tbsp chicken stock
*1+1/2 tbsp sugar
*2 tbsp soy sauce
*4 tbsp vinegar
*2 tsp minced ginger
*2 tsp minced garlic
*3 tbsp minced Japanese leek
*3 tbsp ground sesame seeds
*1 tsp toban djan (Chinese chili bean paste)

1 Banbanji spicy sesame sauce preparation
Add the chicken stock in the sesame paste and mix well. Add the sugar, soy sauce, vinegar, ginger, garlic, and Japanese leeks. Add the ground sesame seeds, toban djan and mix well.

2 Cut the cucumbers in half lengthwise. Scoop out the seeds and slice the cucumbers diagonally.

3 Remove the bone from the boiled chicken (used for making the chicken stock) and cut the meat into 1-2 cm thick slices.

4 Place the cucumbers on a serving dish. Put the boiled chicken on top of the cucumber. Pour the banbanji sauce over.
