Sea Bream and Fresh Cheese Carpaccio Salad
- Ingredients (Serves 4)
- *Sea bream marinated with "konbu" kelp
*80g/ 3oz Salad herb mix (or baby leaf mix)
Homemade fresh cheese
*50 ml fresh cream
*2 tbsp lemon juice
1 Homemade fresh cheese preparation
Warm the milk on medium. Add the fresh cream. Just before it comes to a boil, turn off the heat. Add the lemon juice and stir. Drain with a damp cheese cloth. Put in the refrigerator to cool for about three hours. The remaining water can be used for a lemonade.
2 Orange and soy sauce dressing preparation.
Squeeze an orange. Add the soy sauce to the orange juice. The amount of the soy sauce depends on what you prefer.
3 Soak the salad herb mix in cold water to make it crispy and place on a serving plate.
4 Slice the sea bream at an angle as thinly as you can manage and arrange the slices on top of the salad herb mix.
5 Place the homemade fresh cheese on the top, in the middle. Season with salt and pepper and drizzle olive oil over the salad. Top shredded Parmesan cheese to your taste. Pour the dressing just before eating.
