Sesame Zoni with Komatsuna Mustard Spinach

Ingredients (Serves 4)
*1 bunch "Komatsuna" mustard spinach (300g/ 10oz)
*1 piece "Abura-age" thin deep-fried sliced tofu
* "Kamaboko" fish-paste
*8 "Mochi" rice cakes
*4 cups/ 800ml "Dashi" stock
*4 tbsp soy sauce
*4 tbsp "Mirin" sweet cooking sake
*5-6 tbsp sesame paste
*Half-ground roasted sesame
* "Yuzu" Japanese citron

1 Prepare "Komatsuna" masturd spinach.

2 Blanch the "Abura-age" in rapidly boiling water. Drain and cut into eight strips. Thinly slice "Kamaboko".

3 Bake or grill "Mochi".

4 Soup preparation
Pour the "Dashi" stock in a pan and bring it to a boil.

Add soy sauce, "Mirin", "Abura-age" the deep-fried tofu, and simmer over medium heat for 1-2 minutes.

5 Add sesame paste. Ladle some soup and pour over the paste and stir before adding to the pan. Place "Mochi", "Komatsuna" and "Kamaboko" in a bowl, and pour in piping hot soup. Garnish with half-ground sesame and "Yuzu" peel.
