(1) Homemade Udon Noodles

Ingredients (Serves 2)
160 g all-purpose flour
80 ml water
1/3 tsp salt
Additional flour for dusting

Directions
1. Mix the flour, salt and water in a food processor to make the dough.
2. Let the dough rest for a while.
3. Spread out and make the dough thin with a rolling pin.
4. Cut into thin noodle strips.

(2) Homemade Udon Noodles with Poached Eggs

Ingredients (Serves 2)
Udon
Parmesan cheese
20 g butter
Black pepper
2 poached eggs

Directions
1. Cook the udon in boiling water.
2. Grate parmesan cheese. Add to the boiled udon and mix with butter.
3. Plate the udon and top it off with a poached egg.

(3) Homemade Udon Noodles with Black Sesame Sauce

Ingredients (Serves 2)
Udon
2 tbsp Rika's black sesame paste
200 ml water
10 cm Naganegi long onion
6 tbsp Mentsuyu

Rika's black sesame paste:
100 ml ground black sesame seeds
2 tbsp grated ginger
1 tsp doubanjiang
1 tbsp chili oil

Directions
1. Mix Rika's black sesame paste ingredients and heat the sauce in a microwave.
2. Boil and rinse the udon in a cold water.
3. Dip in the sauce when you eat.

(4) Homemade Udon Noodles with Sudachi Citrus

Ingredients (Serves 2)
Udon
4-6 Sudachi
4 tbsp Mentsuyu
4 tbsp soy sauce
2 tbsp sake
Salt, as needed
600 ml water

Directions
1. Warm the Mentsuyu, soy sauce and sake in a pan. Chill it in the fridge.
2. Boil and rinse the udon in cold water.
3. Slice the citrus (Sudachi).
4. Put the udon in a bowl, pour the chilled soup and top with Sudachi slices to cover the bowl.
