(1) Beef-wrapped Onigiri
Ingredients (Serves 4)
4 thin slices of beef (100 g)
1 tbsp toasted sesame seeds
250 g cooked short-grain rice
Flour
Lettuce
Powdered Sansho pepper
1 tbsp sesame oil
2 tbsp sake
2 tbsp mirin
2 tsp sugar
3 tbsp soy sauce
Pickled radish:
8 to 10 red radishes
100 ml water
100 ml vinegar
45 g sugar
Recipe
1. Take a handful rice, roll it between your hands to make a cylinder-shaped rice ball.
2. Wrap the rice up with the beef slices.
3. Coat the beef-wrapped rice ball with flour, and sear in a pan with sesame oil. Take them out from the pan.
4. Mix the seasonings and put the beef-wrapped rice ball in the pan. Cook them with low heat.
5. Marinate the radish in the sweet vinegar. Dish them up on a plate.
(2) Tomato Miso Soup
Ingredients (Serves 4)
1 to 2 tomatoes (150 g)
1/2 rib of celery (50 g)
500 ml Dashi
45 to 50 g Inaka miso
Pepper
Recipe
1. Slice the celery. Cut the tomato into bite-sized pieces.
2. Heat the Dashi stock in a pan. Add the celery and miso paste.
3. Add the tomatoes and peppers.
