(1) Rika's Chakin Sushi

Ingredients (Serves 4)
Sushi rice:
360 ml Japanese short-grain rice
400 ml water
Dried kombu kelp
50 g toasted sesame seeds
2 tsp sea salt
2 tbsp sugar
3 tbsp rice vinegar

Egg wraps:
4 large eggs
Potato starch
Sea salt
Vegetable oil

Marinated shrimp:
8 small boiled shrimp
Sushi vinegar
Rice vinegar

Dill, for garnish

1. Cook the rice, mix with the sushi vinegar, the marinated shrimp and sesame seeds.
2. Make a thin omlet sheet.
3. Wet your palms and form the sushi rice.
4. Wrap and fold the rice in the omlet.

(2) Sautéed Bell Peppers with Nori

Ingredients (Serves 4)
2 red bell peppers
A pinch of sea salt
1 tbsp soy sauce
1 tbsp sesame oil
1 sheet nori seaweed

1. Thinly slice bell peppers into 6mm pieces.
2. Cook them over low heat. Season with sesame oil and soy sauce.
3. Top with shredded nori.
