Striving to Be Japan's Top Ramen Chef
Workpedia Japan focuses on the lives of foreign nationals working in Japan. This time, we visit the Tokyo shop of Vietnamese-born Tran Van Trung for some of his famous fish-stock ramen.
Tran Van Trung opened his own ramen shop in 2017, and thanks to his specially-made soup, it has grown to such popularity that customers often line up outside.
Trung makes soup stock using a total of five different kinds of dried fish carefully selected from around Japan.
