Green Bell Peppers with Scallion Sauce
Fresh green bell peppers topped with scallion sauce. So simple, so healthy, and so addictive!

Ingredients (Serves 4)
- 6 green bell peppers
- 3 scallions (coarsely minced)
- 1 piece ginger (minced)
- 1 1/2 tbsp soy sauce
- 1 tsp rice vinegar
- 1/2 tsp sugar
- 1/2 tsp sesame oil
Cut the bell peppers lengthwise in half. Remove the stems, pulp and seeds. Press down with your palms to lightly crush. Cut lengthwise into thin strips. Rinse, drain and plate up.
Combine the [Scallion sauce] ingredients and pour over the bell peppers.
