Sweet Potato Kimpira Stir-fry
Vegetables chopped into thin strips then stir-fried with sweet and salty soy sauce seasoning. This kind of dish is called "kinpira", a classic Japanese recipe.

- 200 g sweet potato
- Black sesame seeds, to taste
- 1 tbsp vegetable oil
- 1/2 tbsp sugar
- 1/2 tbsp soy sauce
- 1 tbsp sake
- 1 tsp sesame oil
Thoroughly wash the sweet potato and thinly slice diagonally, leaving the skin on. Cut each slice into strips 4 to 5 cm long, and immediately place in water. Change the water 3-4 times to completely remove excess starch.
Oil a frying pan with vegetable oil and preheat. Blot the surface of the sweet potato dry, then stir-fry over medium heat. After stir-frying for 2-3 min, add the sugar, soy sauce, and sake, and continue stir-frying. Sprinkle with sesame oil and black sesame seeds to finish.
