Okonomiyaki-style Bacon and Potato Pancakes
Savory pancakes made with grated potato have a soft, fluffy texture. Enjoy them okonomiyaki-style with tonkatsu sauce!

Ingredients (Makes 4 pancakes)
- 1 potato (200-250 g)
- 50 g bacon (thinly-sliced)
- Tonkatsu sauce, as needed
- Aonori flakes, as needed
- Skipjack shavings, as needed
- 1 tbsp mayonnaise
- 2 tbsp vegetable oil
Peel and grate the potato. Chop up the bacon. Combine the grated potato and bacon in a bowl. Add 1 tbsp of mayonnaise and mix.
Heat 2 tbsp of vegetable oil in a frying pan placed over medium heat. Drop 1/4 of the potato mixture into the pan and flatten to form a 5 cm-round pancake. Repeat to make three more pancakes. When both sides are golden brown, spread one side with tonkatsu sauce and sprinkle with aonori flakes and skipjack shavings.
Use a spoon to drop the mixture into the pan, and make sure to leave enough space in between the pancakes.
Enhance the flavor by adding minced Japanese leeks or onions.
