Sweet Potatoes Simmered in Lemon Syrup
Sweet potatoes simmered in simple syrup are pleasantly sweet and fragrant with lemon. They're so good you'll want to make sure you always have some on hand.

Excludes time needed to soak the raw sweet potatoes and to allow the simmered sweet potatoes to absorb the lemon flavor.
- 1 sweet potato (240 g)
- 3-4 slices lemon (peeled)
- 4 tbsp sugar
Cut the unpeeled sweet potato into 1 cm thick rounds. (If the rounds are large, cut into half moons.) Soak in water for approx. 10 minutes and then drain.
Put the drained sweet potato pieces into a pot and pour enough water over to just cover. Add the sugar and simmer for approx. 10 minutes over medium-low heat.
When the potatoes are tender enough to pierce with a bamboo skewer, add the lemon slices and bring to a gentle boil. Turn off the heat and set aside to allow the sweet potatoes to absorb the lemon flavor.
Will keep in the fridge for up to 5 days.
