Miso Soup with Tofu and Wakame Seaweed
Miso soup can be made with a number of different ingredients, but tofu and wakame are two classic ingredients that define miso soup. This recipe is definitely worth knowing!

Ingredients (Serves 2)
- 300 ml dashi
- 1 2/3 tbsp miso
- 1/6 block kinugoshidofu (cut into 1 cm cubes)
- Wakame seaweed (cut and reconstituted), as needed
- Japanese leek (chopped), as needed
Pour the dashi into a pot and bring to a gentle boil. Dissolve the miso in the dashi, then add the tofu and wakame. Simmer until the tofu is heated. Serve in individual bowls and garnish with chopped leeks as needed.
