Apple and Walnut Salad
A simple salad mixed with apple and walnut. Using usukuchi soy sauce instead of the regular soy sauce will preserve the beautiful color of the apple.

Ingredients (Serves 4)
- 2 apples (large) (600 g)
- 60 g walnutsNote
Roasted. If you have raw walnuts, you can roast them in a frying pan.
- 3 tbsp rice vinegar
- 3 tbsp olive oil
- 1 tsp usukuchi soy sauce
- 1/3 tsp salt
- Pepper, to taste
- 2 tsp salt
Wash the apples thoroughly, then cut them each into 4 wedges, then cut each wedge into 3 smaller wedges. Make a V-shaped cut into each wedge to remove the core, and peel off only the peel in the center part of each wedge. Cut the apple wedges into bite-sized pieces.
Leaving on some of the peel at the ends of each wedge will make the finished result more colorful.
Add 2 tsp of salt to 1,400 ml of water, then place the cut apple in the saltwater to soak for 5-6 min.
This will help keep the apple from browning.
Coarsely chop the walnuts.
Combine the ingredients for the [dressing] in a small bottle or jar and cover with a cap or lid, then shake the bottle to mix together.
Using a bottle or jar will let you easily mix together all of the ingredients evenly.
Strain the apple pieces, then mix together the apple pieces and chopped walnuts. Pour the dressing over top just before serving.
