Breaded Ham and Sweet Potato Cutlets
Ham and sweet potato cutlet. The sweet and salty flavors balance each other well. It's a great fried snack.

Ingredients (Serves 2)
- 2/3 sweet potato (200 g)
- 2 slices pork loin ham
- 1 beaten egg
- Panko breadcrumbs, as needed
- 2 tbsp mayonnaise (preferably Japanese)
- 1/2 tsp Japanese mustard
- A pinch of salt
- Flour, as needed
- Oil for frying

Cut the unpeeled sweet potato into 5 mm slices and immediately soak them in water. Quarter the sliced ham.

Drain the sweet potato slices and pat dry with a paper towel. Sprinkle with a pinch of salt and dust with flour. Sandwich a piece of ham between two slices of sweet potato. Try to keep the ham from sticking out.
The flour binds the ham and sweet potatoes together.

Dip the sandwich into the egg and coat with panko. If the ham is left uncovered, it may cause the oil to splatter. So make sure to coat the edges.

Heat the oil to 160°C and fry the sandwiches for about 4 minutes until they are soft enough to pierce with a bamboo skewer. Drain and plate up. Serve with mayonnaise mixed with mustard.
