Fried Egg with Aonori Flakes and Chirimenjako
Chirimenjako are dried baby Japanese anchovies. Full of umami!

Ingredients (Serves 1)

Use pasteurized eggs if you have any concerns about consuming raw eggs.
- 15 g chirimenjako
- 1 tsp aonori flakes
- 1 tsp sugar
- A small amount of soy sauce
- 2 tsp vegetable oil
Beat the eggs, then stir in the chirimenjako, aonori flakes, and the ingredients for [A].
Oil the frying pan with 2 tsp of vegetable oil and preheat it over medium heat, then pour in the egg mixture. Stir with cooking chopsticks and cook until cooked through to a soft consistency.
Use a turner to fold the fried egg mixture in half, then fold in half again to make a quarter-circle shape. Cook both sides until browned.
