Fluffy Boiled Potatoes with Pork

Ingredients (Serves 1)
- 1-2 potatoes (160 g)
- 80 g pork trimmings
- 1 tbsp soy sauce
- 1/2 tbsp sugar
- 1 tsp mirinNote
Sake made with alcohol and rice-malt, mixed into glutinous rice, then fermented. In Japan, it is used to add luster and to sweeten ingredients.
- 2 tbsp water
- Green nori seaweed powder, as neededNote
Filamentous seaweed, dried and made into powder.
Peel the potatoes and cut into 4 to 8 equal pieces. Soak in water to remove the starch.
Pour a generous amount of water into a pot, add the potatoes and bring to a boil. Reduce the heat to medium and boil the potatoes for 3 to 4 minutes. When the potatoes are done, add the pork and boil until the color changes.
Pour away the water and shake the pot vigorously over medium heat to allow any remaining water to evaporate and to fluff up the potatoes. Add A and coat the pork and potatoes as you boil off the liquid. Arrange in a dish and sprinkle with green nori seaweed powder.
