Ume Plum Soy Sauce (Ume jouyu)
The taste of sour plum makes a perfect, refreshing summer dressing. It goes well with shredded cabbage.

- 1 umeboshi pickled plum (large)
- 1/4 tsp rice vinegar
- 1 tbsp soy sauce
- 1 pinch of sugar
De-seed the umeboshi, mince and pound.
Mix everything together in a small bowl.
