Sesame Soup with Tofu

When dicing tofu, experienced cooks do it while holding the tofu directly on their palm, then drop it into the pot.

Ingredients (Serves 2)

  • 1/2 block kinugoshidofu (small) (100 g)
  • 1/2 abura-age
  • 400 ml dashi
  • 4 tbsp sesame paste (white)
  • 2 tbsp miso

Cut the tofu into 5 mm cubes. Pour boiling water over the abura-age to remove the excess oil, then cut into pieces 5 mm on each side.

In a pot, heat the dashi, then add the tofu and abura-age.

Just before the dashi in the pot comes to a boil, add 2 tbsp of miso and stir in, then add the sesame paste by first dissolving it in a small amount of the soup, then adding the dissolved sesame paste to the pot. Remove from heat.
