Ingredients (Makes 16)

  • 6-7 cm lotus root
    Note

    Cut into 32 thin slices.

  • [Ground meat filling]

    • 100 g ground pork
    • 2 tbsp lotus root (coarsely chopped)
    • 2 tbsp onion (coarsely chopped)
    • 1 tsp potato starch
    • 1 tsp sesame oil
    • 2 pinches salt
  • Dried red chili (cut into rounds), a small amount
  • [Sauce]

    • Soy sauce, as needed
    • Japanese mustard, as needed
  • Flour

Directions

In a bowl, combine the ingredients for the [ground meat filling] and knead together. Divide into 16 small balls.

Peel the lotus root and use a mandolin slicer to cut it into thin slices, and let the slices briefly soak in water. Remove the lotus root slices from the water and wipe off any excess moisture, then place 8 slices in a single layer on a microwave-safe plate, making sure they don't overlap.

Dust the tops and bottoms of each of the balls of the ground meat mixture with flour, then place 8 of them onto the centers of the 8 slices of lotus root on the plate. Place a slice of lotus root on top of each and press gently to make "sandwiches".

Cover with plastic wrap and microwave at 600 W for 3.5 min. Repeat this process with the remaining meatballs and lotus root slices to make 8 more lotus root meatball sandwiches.

Arrange on a serving plate such that the sandwiches will not fall apart. Soak the dried red chili in water for 2-3 min, then drain and place on top of the sandwiches as a garnish. Dip in the [sauce] and eat.
