Flaked Beef with Soy Sauce
Soy sauce is essential in Japanese cooking. It enhances flavor and fragrance of the dish.

- 400 g beef trimmings
- 50 ml soy sauce
- 50 ml sake
- 1 tbsp sugar
- 5 g ginger (finely chopped)
- 3 tbsp shiba-zuke Japanese pickles (finely chopped)
- White sesame seeds, as desired
Cut the beef trimmings into easy-to-eat pieces. Combine the ingredients for [A].
Place the beef in a frying pan, then heat over low heat. Use a paper towel to soak up any fat that renders out, and fry until crisp. Add [A] and the ginger. Simmer gently to cook off the liquid.
When all of the liquid has cooked off, stir in the shiba-zuke Japanese pickles and sprinkle with white sesame seeds.
Store in a storage container. Will keep in the refrigerator for about 1 week.
