Ingredients

  • 400 g beef trimmings
  • [A]

    • 50 ml soy sauce
    • 50 ml sake
    • 1 tbsp sugar
  • 5 g ginger (finely chopped)
  • 3 tbsp shiba-zuke Japanese pickles (finely chopped)
  • White sesame seeds, as desired

Directions

1

Cut the beef trimmings into easy-to-eat pieces. Combine the ingredients for [A].

2

Place the beef in a frying pan, then heat over low heat. Use a paper towel to soak up any fat that renders out, and fry until crisp. Add [A] and the ginger. Simmer gently to cook off the liquid.

3

When all of the liquid has cooked off, stir in the shiba-zuke Japanese pickles and sprinkle with white sesame seeds.

Tips

Store in a storage container. Will keep in the refrigerator for about 1 week.
