Sweet and Sour Pork Salad with Crisp Panko Breadcrumbs
Healthy, yet crispy and satisfying, non-deep-fried panko topping.

Ingredients (Serves 2)
- 200 g pork loin (sliced for pork ginger)
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 1/2 tbsp sugar
- A pinch of dried red chili (chopped)
- 1/2 head lettuce
- 100 ml panko breadcrumbs
- 1 tbsp vegetable oil
- A pinch of salt
Heat 1 tbsp vegetable oil in a frying pan and fry panko to a golden brown.
This is crucial to making a crisp salad.
Cut the lettuce into 1 cm wide strips.
Combine the [sauce] ingredients in a bowl.
Cut the pork into 3 cm wide strips. Add a pinch of salt to a pot of boiling water and cook the pork. Drain thoroughly.
Plate up the lettuce and top with pork. Drizzle with [sauce] and sprinkle with panko.
