Sparkling Jasmine Tea Jelly
Drinkable jelly made cold with ice water and salt. If you don't like the fizziness, use apple juice instead.

Ingredients (Serves 4)
- 200 ml jasmine tea (store-bought)Note
Pre-chilled in the refrigerator.
- 1 packet powdered gelatin (5 g)
- 3 tbsp sugar
- 400 ml lemon-lime soda
- Lemon, as needed
- 1 tbsp salt
In a microwave-safe container, stir together 50 ml of jasmine tea and the powdered gelatin, then microwave, uncovered, at 600 W for 1 min.
Stir in the sugar. When the sugar has all dissolved, stir in the remaining jasmine tea little by little, then transfer to a metal bowl.
Place the metal bowl into another bowl filled with salted ice water (roughly 1 tbsp of salt for 600 ml of ice water) to chill. Place another bowl or a plate on top of the metal bowl to act as a lid to chill more quickly.
Adding salt to ice water lowers its temperature and lets it chill faster.
Break up the gelatin mixture and place in glasses, then pour lemon-lime soda over top. If available, top with thinly sliced lemon, and serve with straws.
