Chikuwa (Tube-shaped Fish Cake) Poke Salad
Hawaiian poke salad tailored to a Japanese taste. Chikuwa (tube-shaped fish cake) adds umami and substance to the dish.

Ingredients (Serves 4)
- 100 g tuna (red/cubed)
- 1 tbsp soy sauce
- 1/2 tbsp sesame oil
- A pinch of salt
- 3 chikuwa
- 75 g fresh wakame
- 4 leaves looseleaf lettuce (large)
- White sesame seed, as needed
Put the cubed tuna in a bowl. Add [A] and lightly mix together. Marinate for at least 5 minutes.
While marinating the tuna, prepare the other ingredients.
Cut the chikuwa into 7-8 mm thick rounds. Cut the fresh wakame and looseleaf lettuce into bite-size pieces.
Add to the tuna, mix together and plate up. Sprinkle with sesame seed.
