Pork with Ginger and Honey (Hachimitsu-iri shougayaki)
Lean pork round meat soaked in ginger-honey sauce. The rich coating of thick sauce keeps the meat soft and moist.

Ingredients (Serves 2)
- 160 g fresh ham (thinly sliced/no fat)
- 2 tbsp sake
- 1 tbsp soy sauce
- 1/2 tsp honey
- 10 g ginger (grated)
- 1/2 onion (100 g)
- 60 g cabbage (shredded)
Cut the pork into strips 5 cm wide. Thinly slice the onion and place it in a microwave-safe container, cover with plastic wrap, and microwave for about 3 min at 600 W, or until softened.
Mix the ingredients for the marinade together.
Place the pork in a bowl and pour the marinade in. Massage the marinade into the pork and let rest at room temperature for 5 min.
Preheat a frying pan over medium heat and add the pork and marinade on the close half, and add the onion to the far half. Cook over medium-high while separating the pork strips. When the pork browns, mix it together with the onions and stir-fry until most of the liquid cooks off.
Serve on a plate with shredded cabbage.
