Candied Sardines (Tazukuri)

- 50 g gomame sardines *Choose ones that have a blue back, silver belly, and are V-shaped.
- 2 tbsp sugar
- 1 tbsp soy sauce
- 1 tsp water
- 1 tbsp sake
Put half the gomame in a frying pan and toast slowly over low heat, stirring occasionally with cooking chopsticks.
When fragrant, take one out with a pair of chopsticks to test if it's done. If it snaps in half when cool, it's done. Remove and toast the remaining gomame.
In a wide, shallow pot or frying pan, heat the sauce ingredients. When large bubbles start to form, add the gomame.
Quickly mix with cooking chopsticks. Add 1 tablespoon of sake and stir once. Remove from heat, and spread on a tray to cool.
