Amazake and Lemon Ginger Sorbet
A refreshing sorbet made with amazake for a classic taste of Japan. Enjoy two variations - one with figs and one with walnuts. A great dessert to serve at parties!

Ingredients (Serves 2)
- 300 ml amazake (store-bought; straight)
- 1 tsp ginger juice
- 1 tsp lemon juice
- 2 dried figs (20 g)
- 10 g raisins
- 20 g walnuts (shelled; net)
- A pinch of cinnamon powder
Combine the ginger juice and lemon juice with the amazake.
Pour the amazake mixture into a food storage bag. Remove as much air as possible, flatten, and seal. Freeze until hardened. Soak the figs and raisins in warm water to soften. Cut the figs into easy-to-eat pieces. Coarsely chop the walnuts and then toast in a frying pan.
Take the frozen sorbet out of the freezer. Crush in the bag and break up into fine pieces.
Divide the sorbet into two servings. Add the figs and raisins to one and the walnuts to the other. Sprinkle the walnut sorbet with cinnamon powder.
