Strawberry Soymilk Smoothies
A two layer dessert, one layer a tangy sweet strawberry smoothie and the other layer a fragrant yuzu citrus and spice granita. Enjoy both the different flavors and textures.

Ingredients (Serves 2)
- 120 g strawberries
- 80 g plain yogurtNote
- 60 ml soymilkNote
- 15 - 25 g granulated sugarNote
Adjust the exact amount of sugar based on the sweetness of the strawberries.
- 50 ml red wine
- 1/2 tsp yuzu citrus juice
- 30 g granulated sugar
- Cinnamon stick, a small amount
- Star anise, a small amount
- Clove, a small amountNote
It is also fine to only add 1-2 of the spices, rather than all of them.
- 2 white chocolates (thin discs)Note
Melt white chocolate and spread flat, then punch out circles to fit the size of the glasses you use.
- Yuzu citrus peel, a small amountNote
- 60 ml water
Make the smoothie: Cut the strawberries into eighths and spread them out on a metal tray or other flat container, then freeze them. Place the frozen cut strawberries and other smoothie ingredients in a blender and blend until smooth.
Make the granita: Combine all of the granita ingredients and 60 ml of water in a pot and bring just to a simmer. Strain out the solids and pour the liquid into a metal tray, and freeze until solid. Once it has solidified, scrape with a fork to break it into small pieces.
Fill two frozen glasses partway with granita, then place the white chocolate discs on top. Pour the smoothie in on top of that and garnish with yuzu citrus peel.
