Green Beans with Sesame Dressing
A striking contrast of vivid green beans and freshly toasted black sesame seed. Such an appetizing aroma!

Ingredients (Serves 4)
- 200 g green beans
- 6 tbsp black sesame seed (50 g)
- 2 tbsp sugar
- 1/2 tbsp mirin
- 1- 1 1/2 tbsp soy sauce
String the beans and cut diagonally into two or three equal pieces. Boil in lightly salted water for 1-2 minutes. Plunge in cold water and drain. Pat dry with a cheesecloth or paper towel.
Toast the sesame seed over low heat in a frying pan until fragrant. Half grind them in a suribachi grinding bowl. Add the [A] and mix.
Add the green beans and mix. Add salt to taste.
[Suribachi] A mortar. Japanese mortars have radial patterned dents on the inner side to make ingredients into particulate pieces or paste.
