Atsuage Glazed with Amazake Miso
Grilled atsuage glazed with a delicious blend of amazake and miso. It doesn't take a genius to make healthy brain food!

Ingredients (Serves 2)
- 1 atsuage (280 g)
- 1/2 Japanese green onion
- 6 shishito peppers
- 2 tbsp amazake (store-bought; concentrated)
- 2 tbsp miso
- 1 tbsp ground sesame seeds (white)
Cut the atsuage into 6 equal pieces. Cut the green onion diagonally into 1 cm slices. Make a lengthwise incision in the shishito peppers.
Combine the [Amazake miso] ingredients.
Lay the atsuage on a stovetop grill and cook for 2-3 minutes over medium heat. Turn off the heat and turn over the atsuage. Move to the side.
Lay the green onion and shishito peppers on the grill. Coat the atsuage, green onion, and peppers with [Amazake miso]. Turn the heat back on and grill for 3-4 minutes until brown.
