Somen Noodles with Avocado and Natto

You can add many toppings to natto. Common items are soy sauce, mustard, raw egg, and green onion.

Ingredients (Serves 2)

  • 3 bundles somen noodles (150 g)
  • 1 avocado
  • 2 packs natto
  • [A]

    • 400 ml dashi
    • 1 tbsp soy sauce
    • 1 tbsp mirin
  • [B]

    • 1 tbsp soy sauce
    • 1/3 tsp wasabi paste
  • Hoso-negi green onion (cut into thin rounds), as needed
  • Shredded nori seaweed, as needed

Directions

Pour [A] into a pot and bring to a boil. Immediately turn off the heat and set aside to cool.

Peel the avocado and remove the pit. Cut into bite-size pieces and combine with [B].

Cook the somen, then rinse in cold water until chilled. Drain thoroughly.

Plate up the somen. Top with thoroughly stirred natto, and avocado. Pour [A] over the entire dish and sprinkle with hoso-negi and nori.
