Sake Steamed Salmon with Lemon
Pan steaming using sake produces tender and moist salmon with the appetizing aroma of tangy lemon and onion. Simple but delicious, you'll find yourself asking for seconds!

Ingredients (Serves 1)
- 1 fillet amajio lightly salted salmon
- 2/3 onion (thinly sliced)
- 2 slices lemon (thinly sliced)
- 50 ml sake
- A dash of soy sauce
Put the salmon fillet in a bowl and pour boiling water over it. When the surface has turned white, plunge into water and scrape off the scales with a spoon. Rinse and pat dry.
Lay the onions in a frying pan and place the salmon fillet on top. Cover the salmon with lemon slices and add the sake. Cover and place over medium-high heat. When the sake starts to bubble, reduce the heat to low and pan-steam the salmon for approx. 10 minutes, until cooked through.
Drizzle a dash of soy sauce over the salmon, turn off the heat, and plate.
