Daikon Radish Noodles
Shredded daikon radish simmered with atsuage. Light but bursting with flavor.

Ingredients (Serves 2)
- 600 g daikon radish (one whole section near the top)
- 1 atsuage (250 g)
- 1/2 tsp granulated chicken stock (Chinese)
- 1-2 tbsp miso
- A pinch of pepper
- 1/2 tbsp sesame oil
Peel the daikon. Draw a mandoline slicer along the grain to shred into long pieces. Cut the atsuage into 8 mm wide slices.
Pour 800 ml of water into a pot. Add the soup stock and bring to a boil. Reduce the heat to medium and simmer for 3 minutes. Add the atsuage, followed by the daikon.
When the soup returns to a gentle boil, dissolve 1-2 tbsp of miso. Add a pinch of pepper and 1/2 tbsp of sesame oil for fragrance.
The salt content of miso varies from brand to brand, so you'll need to adjust the amount according to taste.
