Stir-fried Curry with Rice

This quick recipe takes only five minutes to cook! The key is to choose ingredients which are easy to prepare.

Ingredients (Serves 2)

  • 150 g pork trimmings
  • 2 green peppers
  • 1/2 onion
  • 300 g cooked rice (warm)
  • [A]

    • A little less than 2 tbsp ketchup
    • 1-1 1/2 tsp curry powder
    • 1/4 tsp salt
    • 1-2 tbsp water
  • 2 tsp vegetable oil

Directions

Cut the green peppers lengthwise in half and remove the stems and seeds. Place on top of each other, flatten and cut across into 7 mm slices. Cut the onion across the grain into 5 mm slices.

Pour the vegetable oil into a frying pan and place over medium heat. Stir-fry the pork. Add the onions and stir-fry until soft. Add [A] and stir-fry.

Add the green peppers and briefly stir-fry. Plate together with the rice.
