Cherry Tomato Miso Soup (ミニトマトの味噌汁; mini-tomato no miso shiru)
Cherry tomatoes combined with stir-fried bacon and celery create a fragrant miso soup bursting with umami!

Ingredients (Serves 2)
- 7-8 cherry tomatoes
- 50 g bacon (thinly sliced)
- 1/3 stalk celery (30 g)
- 400 ml dashi (preferably niboshi dashi)
- Cilantro, as needed
- Vegetable oil
Remove the stems from the tomatoes, and quarter. Peel the celery and cut diagonally into thin slices. Cut the bacon into 1 cm strips.
Heat 1 tsp of vegetable oil in a pot and stir-fry the bacon. When the aroma rises, add the celery and stir-fry until tender.
Add the dashi to the pot and bring to a boil. Add the tomatoes and dissolve 30 g of miso.
Pour into individual bowls, garnish with cilantro, and sprinkle on pepper to taste.
