Sweet Corn Marinated in Soy Sauce
The main ingredients of soy sauce are soybeans, wheat, and salt. These three ingredients are mixed with koji spores (koji-kin) and water, then fermented for six months to become soy sauce.

- 2 ears sweet corn
- 70 ml soy sauce
Remove the corn husks and boil for about 10 min, then roast in a toaster oven for about 5 min, until it begins to brown.
Use a knife to shave off the corn kernels.
Stand the ears of sweet corn upright, with the pointed tip at the bottom, and cut the kernels off by cutting along the cob with your knife.
Place the corn kernels in a bowl. Add the soy sauce and stir in. Let the corn soak in the soy sauce for 1-2 hours, occasionally stirring, making sure to bring the corn kernels from the bottom to the top. Will keep for 1 week in the refrigerator.
