Unagi Stamina Stir-fry

Unagi (freshwater eel) is known for its stamina-boosting properties. Stir-fried together with various vegetables, this dish will give you the energy to get through the hot summer months!

Ingredients (Serves 2)

  • 100 g unagi kabayaki
  • Approx. 5 cm nagaimo yam (net 100 g)
  • 100 g bean sprouts
  • 1 bunch Chinese chives (100 g)
  • Sansho pepper, as needed
  • 1/2 tbsp sake
  • 2 tsp sesame oil
  • 2 tsp soy sauce
  • 2 tsp mirin

Cut the unagi into 5 cm wide slices and then lengthwise into 1.5 cm strips. Place on a heat-resistant plate. Sprinkle with 1/2 tbsp of sake and loosely cover with plastic wrap. Microwave (600 W) for 50 seconds.

Peel the nagaimo and cut into 1 cm wide slices. Stack the slices and cut lengthwise into 1 cm wide strips. Rinse the bean sprouts and drain thoroughly. Cut the chives into 3-4 cm lengths.

Heat 2 tsp of sesame oil in a frying pan and stir-fry the nagaimo. When fully coated in oil, add the bean sprouts and stir-fry for 1 minute. Add the chives and stir-fry briefly before adding 2 tsp each of soy sauce and mirin. Stir-fry briefly before adding the unagi. Lightly mix together, then plate up. Sprinkle with sansho pepper.
