Green Bell Peppers and Tomato in Chilled Dashi Marinade

Grilled bell peppers and tomato wedges marinated in seasoned dashi. This beautiful dish makes a great party appetizer, not to mention it's incredibly delicious too!

Ingredients (Servers 2)

  • 4 green bell peppers
  • 1/4 onion
  • 1 tomato (approx. 100 g)
  • 200 ml dashi
  • [A]

    • 1 tsp usukuchi soy sauce
    • 3 tbsp sugar
    • 1 tsp salt
  • 1/4 lemon juice

Directions

Cut the onion across the grain into thin slices. Remove the tomato stem and cut into 16 equal wedges.

Bring the dashi to a gentle boil and add [A]. Add the onions and tomatoes and immediately turn off the heat. Stir in the lemon juice and empty into a tray. Set aside to cool.

Make an incision around the pepper stems and remove the stems and seeds. Use a grill or gridiron to cook until evenly browned.

Cut the peppers into 1.5-2 cm rounds. Add to the marinade and put in the refrigerator. Serve chilled.

Advice

Add the peppers to the marinade while they're still hot so they absorb more flavor.
