Shiso-flavored Okra and Soybeans

Okra boasts a great nutritional balance of calcium and magnesium. With shiso leaves and ginger, it makes a refreshing dish.

Ingredients (Serves 2)

  • 100 g okra
  • 50 ml boiled soybeans (used a can of boiled or vacuum-cooked soybeans to save time) (70 g)
  • 4 shiso leaves
  • [A]

    • 1 tbsp rice vinegar
    • 1/2 tbsp soy sauce
    • 1/2 tsp sesame oil
    • 1/2 tsp sugar
  • Ginger (cut into thin shreds), as needed
  • Salt

Directions

Sprinkle a pinch of salt over the okra and roll back on forth on the cutting board. Parboil and plunge in cold water. Drain, remove the stems and cut diagonally into slices. Tear the shiso into small pieces.

Mix [A] in a bowl, add the okra, shiso and soybean, and mix together.

Arrange in a dish and garnish with ginger.
