Ingredients (Serves 2)

  • 1 potato (large) (150 g)
  • 2 okra
  • 100 ml milk
  • 150 ml dashi
  • A pinch of grated wasabi
    Note

    *Or use shichimi seven spice.

  • A pinch of salt
  • 1 tbsp miso

Directions

Cut the potato into quarter rounds. Rub the salt into the okra and parboil. Remove the stems and cut into thin rounds.

Simmer the potatoes in the dashi until tender. Use a potato masher or wooden spatula to mash. Stir in the milk and bring to a gentle boil. Dissolve and add the miso to the pot.

Serve in individual bowls. Sprinkle with okra and top with wasabi.
