Chicken Thighs with Curry Salt
Rub the curry powder and salt into the chicken, then let the grill do all the work! Add herbs and spices to customize the recipe.

Ingredients (Serves 2)
- 1 chicken thigh (large) (approx. 300 - 350 g)
- 1 1/2 tsp curry powder
- Mesclun, as needed
- 1 tsp salt
Trim off the excess fat from the chicken thigh and pierce it with a fork in several places on each side. Rub curry powder and 1 tsp of salt into each side.
Rub the curry powder and salt into both sides of the chicken by hand to season it.
Grill the chicken, placing it skin-side-up onto the gridiron. If your grill heats from both sides, cook at high heat for 7-8 min. If your grill heats from only one side, let it preheat for 1.5-2 min first, then cook at high heat for 5 min, turn over, and cook for an additional 3-4 min.
Cut the chicken into easy-to-eat pieces and serve with mesclun.
